Donde Jose is a fantastic restaurant and a complete splurge. The michelin starred restaurant offers up a 9 course tasting menu each night. The goal of the chef is to tell a story of Panamanian cuisine and it does a fantastic job of embracing all the cultures that make Panama unique while using local ingredients, often from their garden. It’s a very unique culinary experience – we had food grilled at our personal table and some topping that was supposed to evoke sand that actually had the consistency of sand. Imaginative cocktails and a good wine list. You need to reserve ahead of time (it only seats 16) and at that point you can let the chef know any allergies.
