This beautiful restaurant sits just above the Inca ruins in Moray and takes its inspiration of experimenting with and expanding use of local Andean products from the ruins below (Moray was basically an Incan agricultural lab). The 8 course meal (with options for alcoholic or non-alcoholic beverage pairings) is quite a splurge but well worth it – one of the best meals we’ve had anywhere. Note that Mil is pretty far from anything, and only open for lunch. We recommend combining it with a visit to Moray and skipping dinner. If you take one of the later seatings, you won’t be done until 5 or 6pm and will be very full.
