Bar Bibliothèque is located in the beautiful 5 star Hotel de la Cité built on the site of the former bishop’s palace. It’s a fantastic bar decorated like a library, complete with oversized chairs, books, and a secret door. The bartenders are friendly and whip up delicious (albeit pricey) drinks – try their “Rigolo” spritz, a vermouth made by the head bartender (and the only vermouth of Carcassonne). It’s a nice break from the over-touristy streets. You can consider splurging and staying for dinner at the adjacent Michelin starred restaurant, La Barbacane.
