One of the best activities in Collioure is a hike up to both the stone windmill and Fort St. Elme which offers you unparalleled views of the seaside town and bay. Try to avoid doing this hike in the peak of the day when the sun can be brutal. From the Cellier Dominicain make your way to Collioure’s modern art museum. Behind it are stone steps and simply follow signs to le moulin. The windmill is exactly what it sounds like, an old stone windmill, now repurposed to make olive oil. It’s intact and impressive close up. From the windmill continue following signs to Fort St. Elme. The hike winds you about 30 minutes above the windmill along a pretty trail of switchbacks and past terraced vineyards. Once you get to the Fort (built in 1552 by Holy Roman Emperor Charles V), you can consider going inside – it hosts an exhibit of medieval armor and weaponry, though the real reason you hiked is for the views.
