A fantastic place to snorkel on the Big Island is Kealakekua Bay, where the Captain Cook Monument stands. This bay has an incredible array of fish (and you can even see dolphins!). Fair Winds offers a nice trip to this bay from Keauhou Bay. This bay is difficult to get to on your own (requires a drive and then steep hike), and the boat provides pleasant transport with the opportunity to see other wildlife on the way.
