Minnewaska State Park in New York has a lovely lake and an easy walk to a nice waterfall. In the fall it’s the perfect leafy hike. It’s not exactly the Catskills (technically a slightly different mountain range – but we think close enough to give you the idea of the region). It’s also not far from other Hudson Valley attractions.
